What is Baked Sushi?
Growing up in Hawaii my side of the family leaned more towards the Japanese side. That included going to potlucks with families who brought all kinds of dishes that had a Japanese-Hawaiian mix type of dishes. I always went straight to the Baked Sushi pan and served myself a good portion and a few sheets of nori (seaweed).
Baked sushi, sometimes known as broiled sushi, has become a contemporary twist on traditional sushi where the ingredients,(rice, seafood, and vegetables) are assembled into a casserole-like dish and baked or broiled in the oven. This method often results in a warm, creamy texture with a flavorful topping, offering a different dining experience compared to traditional sushi rolls or nigiri. Broiled sushi allows for creativity in ingredient selection and presentation, making it a versatile and appealing option for sushi lovers.

Where can you find this sushi?
Most of the time you will guarantee to find Baked Sushi at special occasions in Hawaii like a baby luau, potluck, grad parties, etc. There may be some local food trucks that specialize in it, but I have yet to discover one! Comment and let me know where you have discovered Baked Sushi sold in a restaurant or mom and pop shop.

Baked Sushi has base ingredients, but I have currently updated it to add in a little more ingredients to give it more of a contemporary taste to Hawaii’s trends:

If you’re looking for the Korean Nori, I’d suggest getting it from Costco. They carry the best brand and bang for your buck! Or you can order these nori that I remember seeing in Foodland and eating as a guilty snack.
You could also add in more ingredients to the imitation crab filling or top it with avocado, cucumber, eggs, etc.
How do you make it?
To make Baked Sushi there are a few steps to follow:
- Combine rice, sesame oil, and vinegar and set aside.
- Combine imitation crab, sour cream, and mayo.
- Spread the rice into a 9×13 baking dish. Sprinkle furikake over the rice.
- Layer on the creamy crab mixture.
- Broil the sushi on high for 8-12 minutes until the top just starts to brown and bubble.
- Sprinkle on more furikake seasoning and drizzle on the unagi sauce and spicy mayo. Garnish with green onions.
- Serve with nori sheets and enjoy!

Can I use any type of rice?
For the best results, it’s recommended to use short-grain sushi rice or medium-grain rice for baked sushi. This type of rice is sticky and slightly chewy, which helps the ingredients bind well and creates the right texture. But most commonly in Hawaii, you’ll see a lot of families using medium-grain rice.

Baked Sushi
Ingredients
Sushi Rice:
- 4 cups cooked rice
- 1 tsp sesame oil
- 3 tbsp rice vinegar
Creamy Crab Mix:
- 16 oz imitation crab
- 1 cup sour cream
- 1 cup mayonnaise
Extras or Additional Toppings
- Furikake Seasoning
- green onions
- Unagi sauce
- Spicy mayo
- Korean Nori (Roasted Seaweed)
Instructions
- Preheat the oven to 450°F.
- Combine sesame oil and vinegar. Pour on hot rice and mix. Set aside.
- Combine imitation crab, sour cream, and mayonnaise.
- Spread the sushi rice into a 9×13 baking dish. Sprinkle furikake over the rice. Layer on the creamy crab mixture.
- Bake in the oven for 10-15 minutes or broil the sushi on high for 8-12 minutes until the top just starts to brown and bubble.
- Sprinkle on more of the furikake seasoning and drizzle on the unagi sauce and spicy mayo. Garnish with green onions and any other additions.
- Serve with the nori sheets and enjoy!
