Haupia (Hawaiian Coconut Pudding)

Ingredients

can (13.5 oz )
full-fat coconut milk
1
cup
water

tbsp
sugar

tbsp
cornstarch
1-2
tsp
agar agar
(replacement for cornstarch) *optional
Instructions
In a small bowl, whisk together the cornstarch and water until fully dissolved.
In a medium saucepan over medium heat, add the coconut milk and sugar. Stir until sugar is dissolved and the mixture is warm but not boiling.
Slowly whisk in the cornstarch slurry, stirring constantly to avoid lumps.
Continue to cook the mixture over medium heat, stirring continuously, until it thickens to a pudding-like consistency—about 10–15 minutes.
Pour the mixture into an 8x8 inch pan or dish. Smooth the top and let it cool at room temperature before transferring to the fridge.
Chill for at least 2 hours or until firm. Cut into 2-inch squares and serve cold.
Notes
For a firmer haupia, add up to 2 more tablespoons of cornstarch.
Use full-fat coconut milk for the creamiest texture.
Use agar agar if you want a more firmer haupia.
Garnish with toasted coconut flakes or fresh fruit for extra flair.
Haupia is more of a lighter dessert, add in more sugar if you like a sweeter dessert.
