What is Haupia?
Haupia is a traditional Hawaiian coconut pudding often served at luaus and local celebrations. Its name comes from the Hawaiian word haupia, and it typically appears as soft, chilled squares of creamy, coconut-flavored delight. While it may look simple, this dessert holds a special place in Hawaii’s food culture.
Where Can You Find Haupia?
You can find this dessert all across Hawaii—from family potlucks and catered luau buffets to local restaurants and dessert counters in grocery stores. Places like Ted’s Bakery even turn haupia into pie! But nothing beats it being homemade, which you can easily make in your own kitchen with just a few pantry staples.
What Are the Ingredients for Haupia?
To make this classic dessert, you’ll need:
- Coconut milk (full-fat preferred)
- Sugar
- Cornstarch
- Water
These four ingredients are all you need for an authentic Hawaiian dessert with its signature firm yet silky texture.

Tips & FAQs
Why isn’t my haupia setting?
It might need more cornstarch or longer cooking. Make sure the mixture bubbles and thickens before removing from heat.
Can I make it ahead of time?
Yes! This stores well in the fridge for 2–3 days.
Is haupia gluten-free?
Yes. Traditionally this dessert contains no gluten ingredients, making it safe for most gluten-sensitive eaters.
Can I use lite coconut milk?
You can, but it won’t be as creamy. For the best, stick with full-fat coconut milk.
Can haupia be frozen?
Technically yes, but freezing may affect the texture. It’s best enjoyed fresh and chilled.

Haupia (Hawaiian Coconut Pudding)
Ingredients
- 1 can (13.5 oz ) full-fat coconut milk
- 1 cup water
- 5 tbsp sugar
- 5 tbsp cornstarch
- 1-2 tsp agar agar (replacement for cornstarch) *optional
Instructions
- In a small bowl, whisk together the cornstarch and water until fully dissolved.
- In a medium saucepan over medium heat, add the coconut milk and sugar. Stir until sugar is dissolved and the mixture is warm but not boiling.
- Slowly whisk in the cornstarch slurry, stirring constantly to avoid lumps.
- Continue to cook the mixture over medium heat, stirring continuously, until it thickens to a pudding-like consistency—about 10–15 minutes.
- Pour the mixture into an 8×8 inch pan or dish. Smooth the top and let it cool at room temperature before transferring to the fridge.
- Chill for at least 2 hours or until firm. Cut into 2-inch squares and serve cold.
Notes
- For a firmer haupia, add up to 2 more tablespoons of cornstarch.
- Use full-fat coconut milk for the creamiest texture.
- Use agar agar if you want a more firmer haupia.
- Garnish with toasted coconut flakes or fresh fruit for extra flair.
- Haupia is more of a lighter dessert, add in more sugar if you like a sweeter dessert.
