1lbfresh strawberrieshulled and diced (or use frozen)
1 1/2cupswater
1 1/2cupsgranulated sugaradjust to taste
2-3tsplemon juiceoptional, for brightness
Instructions
Combine strawberries, sugar, and water in a saucepan and stir.
Bring to a simmer over medium heat.
Once the strawberries soften, mash them with a potato masher.
Continue simmering until the mixture thickens into a syrup (10–15 minutes).
Strain through a fine mesh strainer, pressing with a spatula to extract as much syrup as possible. Discard pulp.
Stir in lemon juice, then let the syrup cool and chill in the fridge.
Notes
💡 Tip: Mix 2–3 tablespoons of this syrup into 8 oz of club soda or sparkling water to make a fresh strawberry soda. Great in lemonades, cocktails, milkshakes, or over pancakes!
