Macadamia Nut Crusted Mahi Mahi

Ingredients
- 4-6 mahi mahi fillets
- salt & pepper
- flour
- egg
- 1/2 cup roughly chopped macadamia nuts
- 1/4 cup panko (bread crumbs)
- oil
Lilikoi Buerre Blanc
- 4 tbsp finely chopped sweet onions
- 3 fl oz white wine
- 3 tbsp lilikoi jam
- 2 fl oz heavy cream
- 1/4 cup unsalted butter
Instructions
Crusted Mahi Mahi
- Preheat the oven to 350℉.
- Pat dry the mahi mahi and season it with salt and pepper.
- Ground the macadamia nuts in a blender or food processor. Combine macadamia nuts with the panko.
- Dredge the mahi mahi in flour, egg, and macadamia nuts mixture.
- Heat up a pan with the olive oil over medium heat. Pan fry the mahi mahi until it is golden brown on both sides, about 2 minutes each side.
- Add the fish to the oven and let it bake for just 5 minutes.
Lilikoi Buerre Blanc
- Add the chopped onions, white wine, and lilikoi jelly to a pan over medium heat. Whisk lightly to combine everything and let it reduce until the white wine has evaporated.
- Add the heavy cream and reduce half of the heavy cream.
- Turn off the heat and add in the butter until it has melted.
- Serve the fish over hot rice and sautéed spinach. Drizzle on the lilikoi sauce and enjoy this onolicious meal!
